Hibiki Harmony Master’s Select is a duty-free (aka “global travel retail”) special release of Hibiki Harmony blended whisky. Unlike some Japanese special-edition “travel exclusives”– which are simply re-labelled and marked-up versions of standard bottlings – Master’s Select is actually a different blend than the regular Harmony.The liquid is amber in colour, and offers notes of rose, lychee, a hint of rosemary, mature woodiness and sandalwood on the nose. On the palate, it offers aromas of honey-like sweetness, candied orange peel and white chocolate. The finish is both subtle and tender with a hint of Mizunara. With meticulous precision, we managed to harness the challenging-yet-rewarding characteristics of Japanese Mizunara oak to accentuate the unique flavour profile for which our Hibiki whiskies are known. For me, some of the more delicate characteristics of Harmony are lost here, and too much oaky bitterness has been added. Rather beautifully, ‘hibiki’ means resonance in Japanese, and this speaks to the artistic sensibility of the product. Hibiki was born in the form of a blend that was the result of sampling and tasting aged malt whiskies from one million casks at Suntory. The current incarnations are made from a blend of more than 30 individual malt and mellow grain whiskies, and the final blend is topped off with a whisky aged more than 30 years. This concludes a process that sees the master blender taste over 300 malt whisky samples a day. From its inception to its current forms, Hibiki’s craft and method reflects its core ideologies of harmony and resonance with a caring and precise vision. The notes of orange marmalade and dark chocolate give a lovely sweetness that pairs well with sashimi and nigiri.
