Um estudo mostrou que a deficiência em vitamina K torna-o mais susceptível de sofrer de osteoporose e de fraturas ósseas. Farnham, M. W.; Davis, E. H.; Morgan, J. T.; Smith, J. P. (2008). "Neglected landraces of collard ( Brassica oleracea L. var. viridis) from the Carolinas (USA)". Genetic Resources and Crop Evolution. 55 (6): 797–801. doi: 10.1007/s10722-007-9284-8. ISSN 0925-9864. S2CID 9123036. Khan, S. H.; Ahmad, N.; Jabeen, N.; Chattoo, M. In Portugal, it is traditionally served during celebrations, such as weddings and birthdays, often accompanied by broa (Portuguese cornbread). Ingredients

The variability of ‘Couve-Galega’ is expressed by the date of flowering, if leaves are curly or not, and the number and length of internodes. Variability of this landrace depends on where it is grown, its environmental conditions and their effect on the growth cycle, but it is always cultivated in low-input conditions. It is a metapopulation present across the country (mainland and islands). Until today ‘Couve-Galega’ is present in a large number of countries as a very important crop in the Portuguese horticulture, due to their excellent adaptation to prevalent climatic conditions and good integration into small farming traditional cropping systems. Existe ainda uma boa quantidade de antioxidantes poderosos presentes na couve, nomeadamente a luteína, zeaxantina, bem como kaempferol e quercetina. Flavor and texture also depend on the cultivar; the couve manteiga and couve tronchuda are especially appreciated in Brazil and Portugal. The large number of varieties grown in the United States decreased as people moved to towns after World War II, leaving only five varieties commonly in cultivation. However, seeds of many varieties remained in use by individual farmers, growers and seed savers as well as within US government seed collections. [8] In the Appalachian region, cabbage collards, characterized by yellow-green leaves and a partially heading structure are more popular than the dark-green non-heading types in the coastal South. [9] There have been projects from the early 2000s to both preserve seeds of uncommon varieties and also enable more varieties to return to cultivation. Meanwhile I was trying to lay my hand on some cuttings of tree collards from the United States, having heard that they are ‘true’ perennials, like Daubenton kale, in that they rarely flower and keep growing for several years. (Many brassicas will keep growing after their second year flowering, especially if you remove the flowers as they appear. But I have found that this can be a lot of work – they are often really keen to flower, managing to replenish their flowers just a few days after the last lot have been removed – and that during this enthusiastic flowering phase they produce fewer and smaller leaves.) I couldn’t find anyone who would send tree collard cuttings to England but in searching the web I found a comment that Portuguese kale/cabbage was the European equivalent of the tree collard.

Bacon – Bacon is not a traditional ingredient in this dish. But come onnnnnn! How could I not? Bacon makes everything so delicious! At present at least, the leaves of the Portuguese kale all arise from about the same place at the top of the stout stem. As the plant grows from the crown it drops its lower leaves and so the bare portion of the stem gets longer. Dias, J.S., A.A. Monteiro & S. Kresovich, 1994. It is not easy to say for certain but comparing this kale to photographs on the internet it looks similar to those described as ‘couve galega’. Frillier than some, admittedly, but I understand couve galega to be the name for a landrace plant, a genetically diverse variety of a domesticated species that is adapted to local conditions. So frilly and non-frilly may be all in the mix, or frilly types may come from a particular part of Portugal. [13] Sukuma is mainly lightly sauteed in oil until tender, flavoured with onions and seasoned with salt, and served either as the main accompaniment or as a side dish with meat or fish. In Congo, Tanzania and Kenya (East Africa), thinly sliced collard greens are the main accompaniments of a popular dish known as sima or ugali (a maize flour cake). Collard Greens – Caldo Verde is traditionally made with couve-galega, a type of Portuguese collard greens, but kale can be used interchangeably. It has to be cut into very thin strips, so be prepared to work on your knife skills! 😉
